Paleo Cole Slaw

I found this recipe for Paleo Cole Slaw on It is absolutely wonderful and I haven’t changed the recipe at all so if you want the recipe go to the Paleoeffect website.

You can purchase the Coconut Vinegar at Andy’s and if you don’t happen to have Coconut Vinegar and have to make the recipe you can substitute 3 Tablespoons of White Vinegar and 1 Tablespoon of cider vinegar instead.

I shred the cabbage, carrots and onions in my food processor to save time. I have to make a large batch of this cole slaw when I make Pulled Pork because they go so well together.

In the summer when I receive kohlrabi in my CSA box from Tara Firma Farms I make a variation with 1 cup of red cabbage, 1 cup of kohlrabi and 1 cup of carrot.

I have also added 1/4 cup of chopped parsley, green onion or radish to the cole slaw as well.
